Carniga Soave Classico DOC

• Classification: DOC Bianco Soave Classico.
• Average annual production: 6,000 bottles.
• Grapes: Garganega 80% - 20% Trebbiano di Soave.
• Production area: location Carniga, town of Soave. Vineyard located at 100/150 meters above sea level with west facing, southwest.
• Soil: calcareous clay nature, with tuff areas.
• Training system: low espalier Guyot and cordon.
• Grape yield per hectare; yield deducted per plant: 85 tons with cluster thinning; 1.7 Kg.
• Harvest: usually around mid / end of October, a slight over-ripeness. Manual harvest in 15 kg boxes, selection of grapes, prediraspatura, de-stemming, crushing, cold maceration for 12 hours, soft pressing, hyperoxygenation of settled must.
• Fermentation: steel tanks at controlled temperature with subsequent aging "sur lie" for 12 months.
• Bottle aging: 12 months.
• Characteristics: golden straw yellow color; intense, fruity with sensations of acacia, elderberry and hawthorn; hot flavor and very complex with harmonious aftertaste.
• Pairing: appetizers, soups, oily fish and shellfish, oysters, white meats and cheeses.
